We’ve posted about energy balls on this blog before, but we love them so much that we’re adding another variation for you here! This version includes tropical flavours: zingy lime and dessicated coconut.
Takes: 10 minutes
Serves: makes about 12
Ingredients:
- 1 cup of dates
- 1 cup of cashews
- 1 tablespoon coconut oil
- Zest and juice of 1 lime
- 2-3 tablespoon desiccated coconut
- 1-2 tablespoon chia seeds
Method:
Place all ingredients into a blender/food processor and blitz until smooth-ish. This might take a while so be patient! It should start to come together on its own.
Take a tablespoon of the mixture and shape into a ball, repeating until you have used all the mixture.
Store in the fridge.
