Daz has jumped on the Joe Wicks bandwagon and has been enjoying meals from his book, Lean in 15. This chicken dish is a bowl of cheesy deliciousness but Daz thought it might benefit from a little more onion – three different types of onion, in fact! It contains heaps of protein and will keep you full for hours. Give it a try and let us know how you get on.
Serves 1. Takes 15 minutes if you are a super-speedy cooker. Takes a bit longer for the rest of us.
Ingredients:
- 1/2 tbsp coconut oil
- 75g chorizo finely diced
- 1/2 red onion, chopped
- 1 spring onion, sliced
- 1/4 white onion, chopped
- 1 x 240g skinless chicken breast cut into slices
- Salt and pepper
- 4 cherry tomatoes, sliced in half
- 3 handfuls of baby spinach leaves
- 1 ball of mozzarella, torn into pieces
- 20g pine nuts
Method:
Heat coconut oil in a large frying pan over a medium-high heat. Fry for a minute or so then. Add the onion and fry for another minute or if you are like Daz, add spring onion and white onion for just a wee bit more taste!
Increase heat to high and add the chicken. Season, and stir fry for about 3-5 minutes, by which time the chicken should be completely cooked through.
Add in the cherry tomatoes and cook until they start to soften and break down. It should take roughly a minute or two. Add the spinach and stir until wilted.
Sprinkle over chunks of mozzarella. Turn off the heat and let the cheese melt before spooning on to a plate and adding the pine nuts.
